  • 1 cup cream cheese, for the nogada frosting
  • 3/4 cups icing sugar, for the nogada frosting
  • 1/2 cups walnut, chopped, for the nogada frosting
  • 1 teaspoon vanilla essence, for the nogada frosting
  • 1 teaspoon cinnamon powder, for the nogada frosting
  • 2 tablespoons sherry , for the nogada frosting

  • Beat the egg whites and a pinch of salt until stiff peaks form. Gradually add the sugar until firm peaks form, and incorporate the yolks one by one. Add the flour, baking powder, and vanilla essence and mix gently.
  • Pour the mixture into a greased and floured mold. Bake at 180 °C for 25 minutes. Remove and let cool.
  • Blend the three milks with the walnuts. Set aside.
  • Cut the cake in half and soak it with the three milks mixture. Set aside.
  • For the nogada frosting: cream the cream cheese for 5 minutes, then add the whipping cream, sherry, vanilla extract, ground cinnamon, walnuts, and powdered sugar.
  • Spread frosting on each cake layer and then cover the entire cake. Decorate with pomegranate, strawberry, and chopped walnuts.
