One of the most typical and popular desserts in Mexican cuisine. Alegrías is a sweet made from amaranth, pumpkin seeds, walnuts, peanuts, raisins, piloncillo, and honey. It is a perfect snack due to its high protein content and pleasant flavor.
Mix the pumpkin seeds, walnuts, peanuts, and raisins in a bowl.
Place the piloncillo in a pot. Add the honey. Cook the mixture, stirring constantly. Once it boils for about 15 minutes, turn off the heat and add the lemon juice. Stir. Let it cool for 10 minutes.
Melt the chocolate in a double boiler. Once cooled, add it to the mixture of amaranth and syrup.
Line a mold with parchment paper. Add the nut mixture to the syrup. Incorporate this mixture into the mold. Firmly press down with a bean masher until you achieve a thickness of 4 centimeters.
Let it cool for 2 hours. If you want to present it better, use a cookie cutter to cut circles from the alegría.
