Cut the cherry tomatoes into cubes. Cut the panela cheese and goat cheese into cubes. Chop chipotle peppers and sun-dried tomatoes.
Place lettuce in a medium bowl and add all the ingredients. Mix well to achieve a balance of ingredients.
