Cut the avocado into small cubes. Squeeze the lemon and pour the juice over the avocado cubes.
Peel the pineapple and cut it to remove the central fibrous part of the fruit. Chop the pineapple. Cut the cherry tomatoes into quarters and chop the surimi.
Squeeze the orange and collect 2 tablespoons of juice. In a bowl, mix the mayonnaise, ketchup, orange juice, a pinch of salt, and pepper.
Use pastry rings to create the tower. Place the rings and first pour in the avocado cubes, then cover with surimi and add the layer of pineapple. Gently press down with the back of a spoon. Carefully remove the ring and distribute the tomatoes on top.
Sprinkle parsley over the salad and spread a bit of the ketchup and mayonnaise mixture on the side.
