Avocado Filled with Chicken Tinga

Delicious avocado filled with chicken tinga with a spicy chipotle chili flavor, baked and accompanied by strips of red onion and serrano chili, ideal for a healthy and very tasty dinner that will satisfy any craving.

  • 4 tomatoes
  • 1/4 white onions
  • 2 cloves garlic
  • 1 chipotle chile, dry
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tablespoon olive oil
  • 1/2 white onions, sliced
  • 1/2 chicken breasts, shredded
  • 1 leaf avocado
  • 2 avocados
  • 3 leaves fresh cilantro
  • 1/4 onions, slice
  • 1 serrano chile, sliced

  • Preheat the oven to 180° C.
  • Blend the tomato with the white onion, garlic, and chipotle chili. Season and set aside.
  • Heat a pan over medium heat with olive oil, sauté the onion with the chicken breast, add the blended preparation with a leaf of avocado and cook for 20 minutes or until the liquid reduces. Set aside.
  • Fill the avocados with the tinga and bake for 10 minutes.
  • Serve the avocados with some cilantro leaves, strips of red onion, and slices of serrano chili.
