170 grams beet
1 red beefsteak tomato
100 grams queso fresco
1 orange
100 grams turkey deli ham, thick cut (cubes)

Peel the beet and cook it until soft. Cut into slices and set aside.
Once cooled, place in a bowl along with the sliced tomato.
Cut the cheese into cubes and add it along with the ham.
You can cut the orange into wedges; do this over a plate to catch the juice that spills out.
Make a vinaigrette with the oil and sherry vinegar, incorporating the reserved orange juice. Mix and season with salt and pepper.
