Blintzes with Blueberry and Blackberry Sauce

  • 1 cup Philadelphia® cream cheese, softened
  • 2 1/2 cups ricotta cheese
  • 1/4 cups lemon juice
  • 1/4 cups honey 1/4 cups honey
  • 2 teaspoons lemon zest
  • 8 flour tortillas, large (the ones used for burritos)
  • canola oil
  • 4 rose petals, organic soft pink ones for garnish

  • To prepare the fruit sauce: Place a medium saucepan on the stove over medium-low heat and add all the ingredients.
  • Cook for 30 minutes and cover until you are ready to serve.
  • The sauce should be warm by the time you serve the blintzes.
  • To prepare the filling: In a medium bowl, add the cream cheese and soften using a whisk; to make this process easier, leave the cream cheese at room temperature for a few hours and beat.
  • Then add the ricotta cheese and the rest of the ingredients until everything is well combined and you have a smooth cream consistency.
  • To make the blintzes: Heat the flour tortillas slightly to make wrapping easier and to prevent the tortillas from tearing.
  • Place the warm tortilla on a flat surface and add 1 or 2 tablespoons of filling in the center of the tortilla, then fold as if you were making a burrito.
  • In a skillet over medium heat, add canola oil and fry the blintzes one by one on both sides.
  • Place two servings on a plate and drizzle with the blueberry and blackberry sauce.
  • This dish is served hot or warm.
