Breaded avocados with Russian salad

  • 2 cups breadcrumbs
  • 2 avocados, without skin, halved
  • vegetable oil, for frying
  • 1 1/2 cups potato, cooked, diced
  • 1 1/2 cups carrot, cooked, diced
  • 1 cup peas, cooked
  • 3/4 cups McCormick® Light Dressing
  • 1/4 cups sour cream
  • 1 tablespoon mustard
  • salt
  • pepper
  • parsley, finely chopped

  • Combine flour, salt, and pepper in a bowl. Line up the flour mixture, the beaten egg, and the breadcrumbs. Dredge the avocados in flour, then in the egg, and finally in the breadcrumbs.Fry the avocados in a pot with enough oil. Drain and set aside.
  • Mix the potatoes, carrots, peas, McCormick® Light Dressing, cream, mustard, salt, and pepper in a bowl and combine.
  • Fill the breaded avocados with the Russian salad and garnish with chopped parsley.
