Brown Rice and Quinoa with Mushrooms

  • 2 tablespoons coconut oil
  • 2 cloves garlic, finely chopped
  • 1 cup button mushrooms, sliced
  • 1/2 teaspoons thyme
  • 1 cup brown rice
  • 1/2 cups quinoa
  • 2 1/2 cups water
  • 2 teaspoons salt
  • 1 pinch ground black pepper
  • 3 tablespoons parsley, finely chopped

  • Heat the coconut oil in a medium saucepan, add the garlic, and sauté for 1 minute, then add the mushrooms and sauté for 2 more minutes. Add the thyme, rice, and quinoa, mix well, and add the water and season.
  • Bring to a boil for 3 minutes, lower the heat and cover, cook for 25 more minutes or until the rice is cooked.
  • Uncover and mix with a spoon, continue cooking until the water has evaporated, add the parsley and mix. Adjust the seasoning.
