Brown Rice Bowl with Roasted Vegetables and Ginger Sauce

  • 1 cup brown rice
  • 2 cups water
  • 1/2 cups soy sauce
  • 1 red bell pepper, cut into strips
  • 1/4 cups fava beans, cooked
  • 2 radishes, sliced
  • 2 carrots, sliced lengthwise
  • 1 avocado
  • 1 tablespoon black sesame seeds
  • 1 cup wheat sprouts
  • 2 tablespoons ginger, finely chopped
  • salt and pepper

  • In a pot over low heat, cook the rice with the two cups of water, add half of the soy sauce, ginger, and let cook for 20 minutes.
  • In a bowl, place the vegetables and marinate with the remaining soy sauce for 15 minutes.
  • On a hot grill, roast the peppers with the radishes and carrot.
  • Serve on a flat plate the rice, add the roasted vegetables, the avocado in slices, the black sesame seeds, and garnish with wheat germ.
