Cut the tomatoes in half so that you have two oval halves, then use a spoon to remove the seeds and all the insides of the tomato. Place them on a serving tray or plate.
Inside the hollowed-out tomato halves, place two balls of mozzarella cheese and top with basil leaves, salt, and pepper.
Then drizzle with olive oil to taste and a splash of balsamic vinegar.
