1/2 cups cow's milk
2 cups cherry tomato
1 cup fresh Mozzarella cheese
1/2 red onions, chopped
4 tablespoons basil
2 tablespoons olive oil
pepper, to taste

In a deep bowl, beat the eggs and milk. Season with salt and pepper to taste.
In another deep bowl, mix the halved cherry tomatoes, cubed cheese, red onion, basil, and olive oil.
Heat a small non-stick skillet over medium heat and spray with vegetable spray.
Pour 1/4 of the egg mixture into the skillet to cook for 1 minute. Add 2-3 tablespoons of the filling and spread it over just one half of the egg.
Fold the other half of the egg over the filling and continue cooking for 3-4 minutes or until cooked.
Remove from the skillet and repeat for the other 4 omelettes.
