Caprese Omelette

The Caprese omelette is a very tasty and nutritious recipe to start the day. It is filled with a Caprese salad with a touch of herbs. It’s delicious and healthy.

  • 1/2 cups cow's milk 1/2 cups cow's milk

  • 1 cup fresh Mozzarella cheese

  • In a deep bowl, beat the eggs and milk. Season with salt and pepper to taste.
  • In another deep bowl, mix the halved cherry tomatoes, cubed cheese, red onion, basil, and olive oil.
  • Heat a small non-stick skillet over medium heat and spray with vegetable spray.
  • Pour 1/4 of the egg mixture into the skillet to cook for 1 minute. Add 2-3 tablespoons of the filling and spread it over just one half of the egg.
  • Fold the other half of the egg over the filling and continue cooking for 3-4 minutes or until cooked.
  • Remove from the skillet and repeat for the other 4 omelettes.
