Carrot Fritters

A delicious way to enjoy carrots and thus have a very good balanced diet, and kids will love it for its sweet flavor and texture.

  • 6 carrots, grated
  • 1/8 cups fresh cilantro, finely chopped
  • 2 tablespoons onion, finely chopped
  • 1 tablespoon unsalted butter
  • 100 grams requesón
  • 1/2 kilos corn tortillas
  • salt , to taste
  • pepper, to taste
  • cream , (for presentation)
  • grated cheese, (for presentation)

  • Heat a skillet, once hot add the butter with the carrot, onion, and cilantro, season with salt and pepper to taste, stir gently until the carrot is soft, once done add the ricotta and mix well.
  • Heat some oil in a deep skillet, warm the tortillas over low heat, fill with the carrot, wrap, and fry in hot oil, golden to taste.
  • Plate 4 tacos vertically, add cream and white cheese to taste. READY!!!
