Cauliflower and Edamame Stew

  • Blend the vegetable broth with the tomatoes. Set aside.
  • In a saucepan over medium heat, heat the olive oil, sauté the onion, add the garlic, potatoes, carrots, edamame, cauliflower, chickpeas, and beans, cook for 5 minutes.
  • Pour in the vegetable broth, season with salt and pepper, add the herbs and let cook on low heat for one hour.
  • Add the white wine, adjust seasoning and let cook for 30 more minutes.
