Cauliflower Crust Pizza

A crustless pizza made with cauliflower, ideal for all ages, perfect for those who want to consume fewer carbohydrates. It’s a recipe with a unique flavor that helps you stay in shape.

  • 1 cauliflower
  • 1 egg
  • 1/4 teaspoons salt
  • 1/4 cups Parmesan cheese
  • 1/4 cups Mozzarella cheese
  • 1 teaspoon herb, Italian
  • 1/2 tablespoons garlic powder
  • 1 cup pizza sauce
  • 2 cups grated cheese, Italian style
  • fresh basil leaves, to taste

  • Preheat the oven to 350. Prepare the baking sheet where you will place the pizza by lining it with parchment paper and spraying with cooking spray.
  • Cook the cauliflower in boiling water, once cooked place the cauliflower on a kitchen towel (or paper towels) and let cool for a couple of minutes. Use the kitchen towel to squeeze out the excess water from the cauliflower. (Alternatively, you can use paper towels to take a handful of cauliflower at a time and squeeze out the excess water.)
  • Cut off the stems of the cauliflower and discard (or save for another recipe). Chop the remaining florets and place in a food processor until you have finely chopped cauliflower pulp. (You should have 2-3 cups of pulp.)
  • Return the cauliflower pulp to a kitchen towel to remove as much moisture as possible from the cauliflower or it will crumble when baked.
  • Add the cauliflower pulp to a large bowl. Add the egg, salt, parmesan cheese, mozzarella cheese, Italian seasoning, and garlic powder, and mix with your hands until all ingredients are combined. Form a ball, place the ball in the center of the baking sheet. Stretch into a circle and take to the oven.
  • Bake for 10 to 15 minutes until golden. Remove from the oven. Pour the pizza sauce on top. Sprinkle with cheese (and any other ingredients you desire) and return to the oven (on the baking sheet) for another 10 to 15 minutes until the cheese is melted. Serve hot and top with fresh parsley or basil if desired.
