Eastern European Beet Soup

Half a liter of beet juice per day reduces high blood pressure.

  • 4 beets
  • 4 cups beef consomme, or vegetables
  • 1 clove garlic, chopped
  • 1 teaspoon sugar
  • 2 tablespoons lemon juice , or 1 tablespoon of red wine vinegar
  • salt
  • pepper
  • 1 a bit fresh dill, chopped

  • Preheat the oven to 210 degrees Celsius.
  • Wrap the beets in aluminum foil and bake until tender, about 30-45 minutes.
  • Let cool, then peel and cut into strips or julienne.
  • In a medium pot, bring the broth to a boil, add the beets, garlic, sugar, lemon or vinegar, and salt and pepper to taste.
  • Simmer for 10 minutes.
