Eastern European Beet Soup

4 cups beef consomme, or vegetables
1 clove garlic, chopped
1 teaspoon sugar
2 tablespoons lemon juice , or 1 tablespoon of red wine vinegar
salt
pepper
1 a bit fresh dill, chopped
Preparation

Preheat the oven to 210 degrees Celsius.
Wrap the beets in aluminum foil and bake until tender, about 30-45 minutes.
Let cool, then peel and cut into strips or julienne.
In a medium pot, bring the broth to a boil, add the beets, garlic, sugar, lemon or vinegar, and salt and pepper to taste.
Simmer for 10 minutes.
