  • 2 cups nopal, diced, for the filling
  • 1/4 cups corn kernels, For the filling
  • 1/4 cups tomato, diced, for the filling
  • 1 tablespoon fresh cilantro, finely chopped, for the filling

  • 2 cups refried beans, refried, with broth, for the sauce
  • 1/4 onions, for the sauce
  • 2 tablespoons chili powder, for the sauce
  • 1 tablespoon olive oil, for the sauce
  • 1 1/2 cups San Juan® egg whites
  • 1 tablespoon garlic, powdered
  • 1 tablespoon onion powder
  • cooking spray
  • 1 avocado, cut into wedges, for garnish
  • 1/2 cups panela cheese, diced, for garnish
  • fresh cilantro, For garnish

  • For the filling, heat the oil over medium heat and cook the onion and garlic until translucent. Add the nopales and cook until they release their slime, then add the corn, tomato, cilantro, and season with salt and pepper. Remove and set aside.
  • For the sauce, blend the beans with the onion and chipotle pepper until you achieve a smooth sauce.
  • Heat the oil over low heat in a pot and cook the bean sauce for 5 minutes, seasoning to taste. Keep warm.
  • Whisk the San Juan® Egg Whites with garlic and onion powder, seasoning with salt and pepper.
  • In a skillet, spray a little cooking oil, pour in some San Juan® Egg Whites, and cook for 2 minutes on both sides until cooked through. Repeat until you finish with the egg whites.
  • Place some filling in an egg white tortilla and fold it like a quesadilla.
  • On a plate, place a mirror of bean sauce, add the stuffed egg white tortillas, top with more sauce, and garnish with avocado slices, diced panela cheese, and cilantro. Enjoy.
