Eggplants in Vinaigrette

This eggplant side dish with a touch of vinegar, garlic, and parsley is delicious; in addition to being easy, it is very versatile as it pairs perfectly with any protein, whether chicken, fish, or red meat.

  • 1 eggplant, diced into medium cubes
  • 3 cups water
  • 1/2 cups vinegar
  • 1 teaspoon salt
  • 5 cloves garlic, finely chopped
  • 3 tablespoons parsley
