These healthy and economical cauliflower fritters will delight the whole family. You can use them as a side dish for any meal or as a snack.

1 cauliflower
1 Oaxaca cheese
4 eggs
1 pinch baking soda
salt
oil , for frying

Cut the cauliflower into florets, wash and disinfect well.
Bring water and baking soda to a boil in a pot. While it boils, beat the egg to a stiff peak and shred the cheese.
Cook the cauliflower in salted water, and wait until it is cooked; remember not to cook it for too long as it falls apart quickly.
Make a kind of paste with the cooked and drained cauliflower, mix with the cheese. Form into balls.
Place in the beaten egg and fry with a little oil, browning both sides of the flattened fritter. Place on paper towels to absorb excess grease.
Serve.
