Heat a skillet over medium heat and add the coconut oil, toast the whole wheat bread on both sides until golden brown, and sprinkle with cinnamon.
Place the bread in a baking dish, pour the monk fruit honey, and sprinkle with sliced almonds, walnuts, pumpkin seeds, shredded coconut, and ricotta. Bake for 15 minutes at 180°C.
Serve and enjoy. Pair with coffee.
