  • 1 tablespoon coconut oil
  • 6 slices wholemeal bread, with seeds
  • 1/4 teaspoons cinnamon
  • 1/4 cups honey, made with monk fruit
  • 1/4 cups almonds, sliced
  • 1/4 cups pecans
  • 1/4 cups pumpkin seeds
  • 1/4 cups shredded coconut
  • 1/4 cups requesón

  • Heat a skillet over medium heat and add the coconut oil, toast the whole wheat bread on both sides until golden brown, and sprinkle with cinnamon.
  • Place the bread in a baking dish, pour the monk fruit honey, and sprinkle with sliced almonds, walnuts, pumpkin seeds, shredded coconut, and ricotta. Bake for 15 minutes at 180°C.
  • Serve and enjoy. Pair with coffee.
