Healthy Tuna al Pastor Tacos

  • For the marinade, blend the achiote with vinegar, chiles, garlic, onion, roasted tomato, pineapple juice, salt, oregano, allspice, cumin, and cloves.
  • In a bowl, mix the tuna with the marinade and let it marinate for 30 minutes.
  • In a skillet, add the olive oil, onion, and tuna, and cook for 5 minutes; pour in the marinade and cook for 10 more minutes.
  • Heat the nopal tortillas on both sides and serve the tacos.
  • Garnish with pineapple, cilantro, and red onion. Serve with lime.
