Heart of Palm and Mushroom Aguachile

This is an excellent alternative and vegetarian option to enjoy a delicious aguachile, as shrimp is replaced with heart of palm and mushrooms. It turns out great as it is full of flavor and also low in fat, perfect for staying healthy.

1 cucumber
1 1/2 cups button mushrooms
1 cup lemon juice
1/4 red onions
salt and pepper
serrano chile
3/4 cups fresh cilantro
avocado

Slice the heart of palm.
Cut the cucumber lengthwise, remove the seeds, and slice. Clean the mushrooms and slice them thinly.
Slice the onion into thin strips. Mix the ingredients in a bowl.
Blend the lime juice, cilantro, salt, and pepper.
Add to the mixture and let marinate for 15 minutes.
Garnish with avocado and serve.
