Bring 4 cups of water and vinegar to a boil in a large pot. Once boiling, add the mushrooms and bring back to a boil. Immediately turn off the heat and let the mushrooms sit for 15 minutes. Remove the mushrooms, strain, and rinse.
Place the mushrooms in a deep glass or ceramic dish and mix with the other ingredients, refrigerate for several hours or overnight, remove the garlic.
