Kentucky Light Salad

A light version of the famous coleslaw and carrot salad. The dressing is made with dry jocoque, salt, and pepper. This gives it the same texture as the classic version of this coleslaw and carrot salad. Its flavor is just as good and it's a perfect option to accompany many delicious dishes.

  • 1 cabbage, medium
  • 5 carrots, grated
  • 1/2 cups jocoque, dry
  • 1/4 cups rice vinegar
  • salt and pepper

  • Chop the cabbage in a food processor into small pieces.
  • Wash, peel, and finely grate the carrots.
  • In a separate bowl, mix the dry jocoque with vinegar, salt, and a pinch of pepper.
  • Mix the chopped cabbage and grated carrots.
  • Pour the jocoque mixture over the cabbage and carrots.
  • Add salt and pepper to taste.
  • Let it rest in the refrigerator for 4 to 5 hours.
  • Serve at room temperature.
