  • 2 eggplants
  • coarse salt
  • 4 pumpkins, sliced widthwise
  • 1 tablespoon olive oil
  • salt
  • pepper
  • oregano
  • 1 cup pepperoni
  • 1 cup turkey deli ham, cut into cubes
  • 1 cup Gouda cheese, grated
  • 1 cup Mozzarella cheese, cut into slices
  • 1/2 cups bell pepper, colored, cut into small cubes
  • basil, for garnish
  • black olives, cut into slices

  • Slice the eggplant, place it on a tray, add coarse salt and rub to remove the bitter taste of the eggplant. Rinse and dry thoroughly.
  • Place the eggplant and zucchini on a tray lined with parchment paper, add olive oil, season with salt, pepper, and oregano. Add pepperoni, mozzarella cheese, and black olives to the eggplant, and add ham, gouda cheese, and bell pepper to the zucchini.
  • Bake at 180 °C for 15 minutes.
  • Garnish with basil leaves and enjoy.
