Try this delicious recipe for lettuce tacos with Capistrano ham. They are perfect for a healthy and nutritious dinner. It's ham wrapped in lettuce with carrots and a dressing of chili powder, tamarind, and lemon—a delicious combination.
Clean the tamarinds by removing the skin, soak them in water for 3 hours, add the sugar and bring to a boil, mash them and strain to separate the pits and fibers. Let cool and set aside.
Mix the tamarind pulp with chili powder to taste and a few drops of lemon.
Spread the lettuce leaves and lightly drizzle with olive oil, place the slices of Capistrano® Equilibra Turkey Ham, roll them up and secure with a toothpick if necessary. Serve the lettuce tacos accompanied by julienned carrots and tamarind dressing.
