Light Swiss Enchiladas

This is my version of traditional Swiss enchiladas. No fat and healthier but keeping that delicious touch of Mexican green sauce. Excellent for a family dinner! I promise they will love it.

  • 1 chicken breast
  • 16 tortillas
  • 1 kilo tomatillo, fresh tomato
  • 1/4 onions
  • 2 cups plain yogurt
  • 1 clove garlic
  • 1 bunch fresh cilantro
  • 250 grams asadero cheese
  • 4 zucchinis
  • 2 serrano chiles

  • Boil the chicken breast with onion and garlic. Remove and shred. Reserve the broth.
  • In the same broth of the chicken, boil the fresh tomatoes and zucchinis.
  • Blend the tomatoes, zucchinis, garlic, and onion along with cilantro and chiles. Add spices to your liking. Add the yogurt and blend until you achieve a creamy consistency.
  • Heat the tortillas on the griddle. Make rolls with the tortillas and chicken.
  • Serve four rolls on each plate, add cheese, and drizzle with the sauce.
  • If you want, you can bake them, but for more practicality, just place the baking dish in the microwave for one minute and you're ready for a delicious dinner!
