This is my version of traditional Swiss enchiladas. No fat and healthier but keeping that delicious touch of Mexican green sauce. Excellent for a family dinner! I promise they will love it.
Boil the chicken breast with onion and garlic. Remove and shred. Reserve the broth.
In the same broth of the chicken, boil the fresh tomatoes and zucchinis.
Blend the tomatoes, zucchinis, garlic, and onion along with cilantro and chiles. Add spices to your liking. Add the yogurt and blend until you achieve a creamy consistency.
Heat the tortillas on the griddle. Make rolls with the tortillas and chicken.
Serve four rolls on each plate, add cheese, and drizzle with the sauce.
If you want, you can bake them, but for more practicality, just place the baking dish in the microwave for one minute and you're ready for a delicious dinner!
