The mojarras fillets are marinated with orange juice and seasoned with salt and pepper for one to two hours in a skillet.
Garlic is sautéed and the fillets are fried. They are set aside.
All the chiles (tree chile, cambray, and ancho) are washed and deveined, then cooked and blended with cream cheese.
If it turns out too spicy, add a little cream.
The fillets are coated with the cream cheese sauce and served with California-style cooked vegetables and a puree.
