Mom's Light Taquitos

Mom's light taquitos are a simple, economical, and very light recipe. Try it, and you'll see that everyone loves them.

  • 12 flour tortillas, you can use whole wheat
  • 6 carrots, grated
  • 1/4 cups lime juice
  • 1 1/2 cups requesón
  • cream cheese, to taste
  • salt, to taste
  • cooking spray
  • avocados
  • salsas, of your preference
  • pepper, to taste

  • Mix the grated carrot with the cottage cheese and Philadelphia cheese.
  • Season with salt and pepper and add the lemon juice.
  • Heat the tortillas and fill them with the carrot mixture. Make the taquitos.
  • In a hot skillet, spray a little oil and fry the taquitos.
  • Serve hot and garnish with a little avocado and spicy sauce if desired.
