Noodles with Creamy Chipotle and Pasilla Sauce

  • 1 cup whipping cream
  • 1/2 cups cream cheese
  • 2 chipotle chiles in adobo sauce
  • 1 pasilla chile, deveined, roasted, and soaked
  • 1 tablespoon fresh cilantro
  • 1 clove garlic
  • 1 tablespoon unsalted butter
  • salt and pepper
  • 2 tablespoons unsalted butter
  • 2 Eva® clam of zucchini noodles, 300 g each
  • pasilla chile, in fried rings for decoration
  • fresh cilantro, for decoration
  • Parmesan cheese, to accompany

  • Blend the cream, cheese, chipotle chili, pasilla chili, cilantro, and garlic.
  • Heat a tablespoon of butter, pour in the sauce, season with salt and pepper, and cook for 10 minutes, or until it thickens slightly.
  • In a pan, heat the butter and cook the Eva® Zucchini Noodles for about 5 minutes or until they are al dente.
  • Pour in the sauce, mix, and let it cook for another 3 minutes over low heat.
  • Serve on a flat plate and decorate with rings of pasilla chili, fresh cilantro, and parmesan.
