Oat Quesadillas

  • 200 grams oats, natural
  • 2 small boxes tomato , chopped
  • 1/2 onions, chopped
  • 1 clove garlic, chopped
  • 6 árbol chiles, green
  • 1 sprig fresh epazote
  • 12 corn tortillas

  • 2 cups water

  • Boil the oats with two cups of water until it becomes slightly thick and drain.
  • In a skillet, season the tomato, onion, garlic, chiles, and epazote with a little salt until they release their juices, and mix with the drained oats, stirring until it becomes a homogeneous paste.
  • Spread a little of the resulting paste on a tortilla, fold it, and fry it in oil until golden brown, and do the same with each tortilla.
