Oat Quesadillas with Panela Cheese

These healthy quesadillas are a nutritious option to enjoy one of the most sought-after Mexican snacks. They are easy to make and with easily obtainable ingredients.

  • 3 cups oats, ground
  • 1 teaspoon salt
  • 1 teaspoon REXAL® baking powder
  • water, hot
  • panela cheese, cut into strips
  • green salsa, to accompany

  • In a bowl, mix the ground oats with the salt and Rexal® baking powder; gradually add the hot water until it reaches a dough-like consistency, it should be soft and manageable to roll out. Let it rest for 5 minutes.
  • Roll out the dough thinly (2 mm thick) and cut circles of 15 cm in diameter (the size of a tortilla), fill the discs with strips of panela cheese and close them by bringing the edges together and pressing with your fingers.
  • Bake for 20 minutes at 180 °C, remove from the oven and serve the quesadillas with green salsa.
