Oatmeal, Blueberry, and Yogurt Bars

These bars are delicious and also perfect for sending with kids as a lunch.

  • 1/2 cups Oikos® greek style yogurt, for the glaze
  • 1 cup powdered sugar, for the glaze
  • 1/4 teaspoons vanilla essence, for the glaze
  • 2 cups oats
  • 1 cup almonds, chopped
  • 1 cup cranberries
  • 1 tablespoon chia seeds
  • 40 grams unsalted butter
  • 1/3 cups raw sugar
  • 1/2 teaspoons vanilla essence

  • Lightly grease a baking sheet, set aside.
  • In a bowl, mix the oats, almonds, blueberries, and chia seeds.
  • In a pot, melt the butter, honey, and brown sugar. Once melted, stir in the vanilla extract.
  • Pour the liquid mixture over the oatmeal mixture, and mix only until it is moistened.
  • Pour the mixture into the baking sheet, and press to compact.
  • Let cool in the refrigerator for 2 hours and cut the bars.
  • Meanwhile, prepare the glaze, mix all the ingredients, it should be liquid but not too runny.
  • Cover the top of the bars with yogurt and let it drain a little. Let them dry for 1 hour and enjoy.
