For a healthy snack or a side dish for your main courses, prepare these delicious parmesan zucchini chips with a very simple tomato sauce, and you won’t need oil to fry them; you will be surprised.
In one bowl, place the flour; in another, the beaten eggs; and in another, combine the breadcrumbs with the cheese, oregano, salt, and pepper.
Coat each slice by first dipping it in flour, then in egg, and finally in the breadcrumb and cheese mixture.
Place the zucchinis in the air fryer and fry at 390°F for 7 minutes or until golden and crispy. Set aside.
For the sauce, in a deep pan, heat the oil and cook the onion until translucent, add the garlic and tomato. Cook over low heat for 10 minutes, add oregano and season.
Serve the zucchinis with the tomato sauce and garnish with chopped basil.
