Parmesan Zucchini Chips with Tomato Sauce

For a healthy snack or a side dish for your main courses, prepare these delicious parmesan zucchini chips with a very simple tomato sauce, and you won’t need oil to fry them; you will be surprised.

  • 2 zucchinis, large zucchinis
  • 1 cup flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/2 cups Parmesan cheese, grated
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 2 tablespoons olive oil
  • 1/4 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 5 tomatoes, peeled and diced
  • 2 pinches salt
  • 1 pinch pepper
  • 1 teaspoon oregano

  • Cut the zucchinis into medium-thick slices.
  • In one bowl, place the flour; in another, the beaten eggs; and in another, combine the breadcrumbs with the cheese, oregano, salt, and pepper.
  • Coat each slice by first dipping it in flour, then in egg, and finally in the breadcrumb and cheese mixture.
  • Place the zucchinis in the air fryer and fry at 390°F for 7 minutes or until golden and crispy. Set aside.
  • For the sauce, in a deep pan, heat the oil and cook the onion until translucent, add the garlic and tomato. Cook over low heat for 10 minutes, add oregano and season.
  • Serve the zucchinis with the tomato sauce and garnish with chopped basil.
