Pita with Swiss Chard, Mushrooms, and Quinoa

This delicious way of eating pita accompanied by a mixture of Swiss chard, mushrooms, and quinoa will delight you. It is very simple to prepare and a perfect option to increase vegetable consumption in your diet.

  • 4 pita breads, toasted

  • Heat olive oil, add garlic and onion.
  • Once the onion changes color, add the Swiss chard, mushrooms, and bean sprouts, and mix for a couple of minutes.
  • Add the quinoa; season with salt and pepper.
  • If you like, you can spread a little hummus on the toasted pita bread and add the vegetable and quinoa mixture.
