4 pita breads, toasted
1 cup button mushrooms, cut in half
5 leaves chard, cut into strips
1/2 onions, sliced
1/2 cups soybean sprout
1 cup quinoa, cooked
1 teaspoon garlic, finely chopped
1 tablespoon olive oil
salt and pepper
hummus, for garnish, optional
Preparation

Heat olive oil, add garlic and onion.
Once the onion changes color, add the Swiss chard, mushrooms, and bean sprouts, and mix for a couple of minutes.
Add the quinoa; season with salt and pepper.
If you like, you can spread a little hummus on the toasted pita bread and add the vegetable and quinoa mixture.
