Plantain Patties Filled with Beans

  • 3 plantains, ripe with skin
  • 3 tablespoons flour
  • 1/2 cups refried beans
  • 1 cup vegetable oil
  • 1/2 cups tomatillo
  • 1 clove garlic
  • 2 serrano chiles
  • 1 tablespoon onion, finely chopped
  • 3 pinches salt

  • Heat the water and boil the plantains with their skin for 25 minutes. Remove the plantains from the water; let them cool, peel, and mash them into a puree.
  • Mix the plantain puree with the flour and let it rest for 5 minutes. Form the patties and fill them with the refried beans.
  • Heat the oil in a pan over medium heat and fry the plantain patties one by one until they are well browned and remove the excess grease.
  • Blend the tomato, garlic, chili, and season. Serve in a sauce boat and add the chopped onion.
  • Serve the patties with sauce and enjoy.
