  • 1 tablespoon baking soda
  • 1 pinch salt
  • 4 nopales, cut into strips
  • 2 cloves garlic, with skin, for the sauce
  • 6 tomatillos, for the sauce
  • 2 serrano chiles, deveined and seedless, for the sauce
  • 3 allspice berries, for the sauce
  • 1 tablespoon cumin, whole, for the sauce
  • 1/4 cups chicken broth, skinless, for the sauce
  • 1 tablespoon fresh cilantro, for the sauce
  • 1 tablespoon epazote, for the sauce
  • 1 hoja santa, for the sauce
  • 1 tablespoon onion powder, for the sauce
  • 1 tablespoon canola oil
  • 8 eggs
  • 1/2 avocados, cut into wedges, for decoration
  • 1 serrano chile, cut into slices, for decoration
  • 2 tablespoons Cotija cheese, grated, for decoration

  • In a pot with water, baking soda, and salt, cook the nopales until they are soft. Drain and set aside.
  • For the sauce, in a hot comal, roast the garlic with skin, tomatoes, chilies, allspice, and cumin. Remove and peel the garlic.
  • Blend the roasted vegetables with the chicken broth, cilantro, epazote, hoja santa, onion powder, and salt to taste, until you obtain a smooth sauce.
  • Heat a pot over medium heat with a little canola oil, add the sauce, and cook for about 20 minutes. Incorporate the nopales and the eggs one by one. Cover and cook for 12 to 15 minutes or until the eggs are cooked but the yolk is soft. Adjust seasoning.
  • Serve two eggs per portion in a deep plate with sauce and nopales. Decorate with avocado, serrano chili, Cotija cheese, and cilantro.
