Portobello Burger with Roasted Tomato and Arugula

  • 6 portobello mushrooms
  • 1 1/4 cups cottage cheese
  • 1 white onion, cut into very thin feathers
  • 1 cup cherry tomato
  • 1 cup arugula
  • 1/2 cups olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons ground pepper
  • 2 teaspoons salt
  • 2 cloves garlic, finely chopped

  • Sauté the garlic and onion with a little olive oil and season with salt and pepper.
  • Add olive oil, salt, pepper, and oregano to the cherry tomatoes, and place them on a baking tray.
  • Place the portobello mushrooms on the same tray as the cherry tomatoes and season with salt and pepper. Bake for 25 minutes at 180° C.
  • Take one mushroom and on the concave side, place the sautéed onion, cottage cheese, cherry tomato, and arugula. Cover the mushroom with another portobello to create the shape of a burger.
