Pumpkin Seed and Coconut Snack

  • 1/3 cups chia seeds
  • 1 cup pumpkin seeds
  • 1/2 cups sunflower seeds
  • 1 tablespoon sesame seeds
  • 1 teaspoon salt
  • 1/2 tablespoons rosemary
  • 1/2 tablespoons thyme
  • 1/2 cups shredded coconut

  • Preheat the oven to 140° C
  • In a bowl, mix chia seeds with pumpkin seeds, sunflower seeds, sesame seeds, salt, rosemary, thyme, and grated coconut until a paste forms.
  • In a greased paper-lined mold, add the mixture and spread it evenly with a thickness of 5 cm, cut the dough into regular squares, bake for 40 to 50 minutes.
  • Remove the mold from the oven and flip the dough, bake for an additional 35 minutes covering with aluminum foil to prevent the seeds from burning. Remove from the oven and cut.
