Quinoa and Lentil Sliders

This Quinoa and Lentil Sliders recipe is the perfect balance between a healthy and delicious meal. The wonderful thing about this dish is that quinoa is a grain with a high protein content, making it very nutritious, and the best part is that it is mixed with red onion, red peppers, and parmesan cheese for added flavor.   • 3 cups water
  • 1 1/2 cups quinoa
  • salt
  • 1 1/2 cups lentils, cooked
  • 1 egg
  • 1/2 cups Parmesan cheese
  • 1/2 cups breadcrumbs
  • 3 tablespoons red onion
  • 1/2 cups red bell pepper
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon paprika
  • 1 tablespoon fresh cilantro, finely chopped

  • 1 package cream cheese, for the dip (190 g)
  • 1/4 cups yogurt, for the dip
  • 2 cloves garlic, finely chopped, for the dip

  • Preheat the oven to 180° C.
  • In a pot with 3 cups of boiling water and a little salt, cook the quinoa for 15 minutes or until it pops. Drain and cool.
  • In a food processor, process the lentils until you obtain a puree.
  • In a bowl, mix the lentils with the cooked quinoa, the egg, the parmesan cheese, the breadcrumbs, the red onion, the red pepper, the garlic, the paprika, the cilantro, and season with salt and pepper.
  • Form the sliders on a wooden board with the help of your hands.
  • Place on a greased baking tray and bake for 15 minutes or until golden brown.
  • For the dip, in a bowl cream the cheese with the yoghurt, add the garlic, season with salt and pepper.
  • Serve the sliders with the dressing and enjoy.
