Quinoa Chilli

I present to you a delicious recipe, quinoa with vegetables in chilli style, just like the traditional American dish, but a healthier version and without meat. Delicious!

  • 1 package quinoa
  • 1 can sweet corn
  • 1 cup beans, cooked
  • 1 bell pepper
  • 2 tomatoes
  • 1 clove garlic
  • 1/4 green onions
  • 1 zucchini
  • 1 tablespoon cumin powder
  • 1 tablespoon chile powder
  • salt
  • feta cheeses, to taste
  • cream , to taste

  • Cook 1 cup of quinoa with 2 cups of water. Make sure it doesn't run out of water and add another cup if necessary. It will be cooked when the center of the quinoa grain is no longer hard. The quinoa will look fluffy.
  • In a pot, pour olive oil and garlic for 1 minute.
  • Add the onion, the tablespoon of cumin, and the tablespoon of chili. The onions should mix well with the powdered ingredients.
  • Add the tomato and mix for 1 or 2 minutes.
  • Incorporate all the vegetables: zucchini, bell pepper, and corn, as well as the cooked beans with a little of the broth. If needed, add a bit of water to create a broth in which the vegetables will cook. Season with salt and pepper.
  • Once it boils and the zucchini is fully cooked, add the cooked quinoa and incorporate all the ingredients. Adjust the seasoning and let it boil for about 5 minutes.
  • Ready, add cream and cheese.
