Prepare this delicious low-carb version of ramen with Eva® Zucchini Noodles served in a hearty vegetarian mushroom broth full of flavor. This Asian-origin dish is very nutritious and you will love it.
1/4 cups green onion stalks, cut into pieces, for the broth
1 cup salt, in pieces, for broth
1/4 cups soy sauce, for broth
3 cups vegetable broth, for broth

2 liters water, to cook noodles

2 Eva® clam of zucchini noodles, 300 g each
3 eggs
1/4 cups green onion stalks, chopped, for serving
1/4 cups corn kernels, for serving
6 slices naruto, for serving
2 tablespoons sesame seeds, for serving
2 radishes, sliced, for serving
2 nori, quartered, for serving

Heat a small pot over medium heat with the oils, cook all the broth ingredients until soft, fill with vegetable broth and season with salt, cook for 30 minutes to allow the liquid to take on the flavor of the ingredients, strain the broth and set aside.
Heat a small pot over medium heat with the water and salt, once it boils cook the Eva® Zucchini Noodles for 3 minutes, remove and submerge in ice water to stop the cooking, strain and set aside.
In the same hot water, cook the eggs for 9 minutes, cool, peel, and cut in half.
In a bowl, serve the vegetable broth, the noodles, the egg, the green onion tops, the yellow corn, the naruto, the black sesame, the radish, a bit of the mushrooms from the broth cooking, and the seaweed for decoration, enjoy.
