Soy Stew Type Obispo

  • 1 kilo soy, texturized
  • 1 bunch epazote
  • 3 red onions
  • 1 sprig fresh cilantro, finely chopped
  • 4 manzano chiles, more or less, to taste
  • 2 grams salt, to taste
  • 4 tablespoons vegetable oil
  • 2 grams pepper, to taste

  • Soak the soy in water while chopping the ingredients (cilantro, manzano chili, epazote, and onion).
  • Heat the oil, then sauté the ingredients.
  • Drain the soy and after 2 minutes, add it to the pan with the other ingredients.
  • Season to taste.
