Spaghetti Squash with Lettuce Pesto and Italian Chicken

  • 2 tablespoons coconut oil
  • 2 boneless chicken breast, cut in half
  • 1/2 teaspoons salt
  • 1/4 teaspoons pepper
  • 1/2 cups basil, cut into thin strips
  • 2 tablespoons fine herbs
  • 1 cup cherry tomato, cut in half
  • 1 pinch salt
  • 1 pinch pepper
  • 4 cups water
  • 1/2 Italian Lettuce Eva®
  • 1/2 cups parsley, fresh leaves
  • 1/4 cups pine nuts, toasted
  • 1/4 cups almonds, toasted
  • 1/2 cups olive oil
  • 2 cloves garlic
  • 1 pinch salt
  • 1 pinch pepper
  • 4 pumpkins, cut into thin strips

  • Heat coconut oil in a pan over medium heat and sear the chicken breasts, previously seasoned. Add the basil leaves and fine herbs, add the cherry tomatoes, and season to your liking.
  • Cover the preparation and cook for 10 minutes on low heat. Remove the chicken breast and cut into strips. Set aside.
  • Heat the water in a small pot until it boils. Add the Italian Lettuce Eva® along with the parsley leaves and blanch for 2 minutes. Remove and submerge in ice water. Squeeze the leaves and set aside.
  • Blend the blanched leaves with the pine nuts, almond, olive oil, and garlic. Season and set aside. Heat a pan over medium heat, add the spaghetti squash and the pesto. Cook until mixed, remove from the pan and serve with the chicken preparation and cherry tomatoes.
