Spicy Chicken Quinoa Salad

If you still don't know how to make quinoa, this spicy chicken salad recipe is what you were looking for. Besides that quinoa has protein, this dish is the perfect combination with vegetables. Ideal for taking it as lunch to work, its citrus vinaigrette gives it a special flavor. As a tip, we recommend rinsing the quinoa several times before cooking it.

  • 2 chicken breasts, whole
  • 1/4 cups olive oil, for the marinade
  • 2 tablespoons cajun seasoning, for the marinade
  • 2 tablespoons cayenne pepper, for the marinade
  • 1 teaspoon garlic powder, for the marinade
  • 1 teaspoon onion powder, for the marinade
  • 1 pinch salt, for the marinade
  • 1 pinch pepper, for the marinade
  • 1/2 cups orange juice, for the vinaigrette
  • 3 tablespoons lime juice, for the vinaigrette
  • 1 teaspoon chile flakes, for the vinaigrette
  • 1 tablespoon chives, for the vinaigrette
  • 1/2 cups avocado oil, for the vinaigrette

  • 2 cups quinoa, soaked and cooked
  • 1 cup corn kernels, yellow
  • 1 cup green beans, blanched
  • 1 cup asparagus, blanched and sliced
  • 1 cup peas, blanched
  • 1 cup goat cheese, crumbled
  • lettuce, in leaves, for presentation
  • tomato, quartered, for presentation

  • Place the chicken breast in a bowl and marinate with the oil, Cajun seasoning, cayenne pepper, garlic powder, onion powder, salt, and pepper. Set aside.
  • Heat a grill over high heat and cook until fully cooked, rest, and cut.
  • For the vinaigrette: in a bowl, mix the orange juice, lemon juice, chili flakes, scallions, avocado oil, and season with salt and pepper. Set aside.
  • In a bowl, mix the quinoa with the yellow corn, green beans, asparagus, peas, goat cheese, dress with the vinaigrette, and mix.
  • Serve in a deep plate, accompanied by lettuce leaves, the chicken breast, and tomatoes.
