Stewed Carillas Beans with Chorizo

  • 300 grams carilla bean legumes La Asturiana®
  • 200 grams Spanish chorizo, stewed
  • 1 onion, medium 1 onion, medium

  • 2 teaspoons sweet paprika
  • 4 tablespoons olive oil 4 tablespoons olive oil

  • We peel and clean the garlic clove, onion, and tomatoes.
  • With these same ingredients, chopped into brunoise (small cubes) once peeled and cleaned, we prepare a sauté.
  • We add the carillas and sliced chorizo to the sauté.
  • We cover with water, season with salt, and let it boil for 90 minutes over low heat, until the carillas are cooked.
  • We serve drizzled with olive oil at the time of serving, also adding a bit of sweet paprika.
