Stuffed Zucchini with Soy Meat

  • 1 1/2 cups soy, rehydrated
  • 4 zucchinis, medium
  • 1/2 cups tomato, diced
  • 1/2 cups Manchego cheese, grated
  • 125 grams onion, chopped
  • 1 clove garlic

  • Cook the zucchinis and cut them in half, removing the seeds.
  • In a skillet, sauté the onion and garlic; when they are slightly golden, add the tomato and the soy. Cook for about 5 minutes and season with salt and pepper.
  • Stuff the zucchinis with the soy mixture, add a little cheese, and bake until melted. Serve.
