Sweet Pear

  • 4 pears
  • 200 grams raw sugar
  • 1 vanilla bean
  • 1/4 kilos requesón
  • 1 lemon
  • 50 grams nut , (peeled)
  • sprigs peppermint, or spearmint

  • Peel the pears in half, keeping the stem but removing the core. Squeeze lemon juice over the pears to prevent them from turning black.
  • Pour water into a pot ready to boil. Cut the vanilla pod in half lengthwise and add it to the pot along with the brown sugar and mint leaves. Let it come to a boil. Remember to set aside some mint leaves for the nut mixture.
  • When it reaches the boiling point, place the cooking basket with the pears. Cover the pot and let the fruit cook for about 15 to 17 minutes. Let them cool.
  • Chop the walnuts and mix them with the ricotta and a few mint leaves. Stir to fully combine the ingredients.
  • Place the mixture of water and sugar back on low heat to reduce it for about 6 to 7 minutes. The goal is to achieve a thick consistency like syrup. When finished, remember to strain it and let it cool until it reaches a lukewarm temperature.
  • Serve half a pear per portion. Drizzle them with the syrup and then add the mixture of ricotta, mint, and walnuts.
