  • 600 grams rib eye, in steaks
  • salt , and pepper
  • 100 grams Poblano chile
  • 50 grams portobello mushroom
  • 100 grams bacon, chopped
  • 100 grams onion, sliced
  • 25 grams serrano chile, sliced
  • 400 grams fava beans, green
  • oregano
  • 15 grams fresh cilantro
  • 100 grams cherry tomato
  • 200 grams goat cheese, (any fresh cheese)
  • 25 milliliters balsamic vinegar
  • 100 milliliters extra virgin olive oil
  • salt , and pepper
  • 200 grams lettuce, (variety)
  • 50 grams button mushrooms, sliced

  • Season the meat with salt and pepper and set aside.
  • For the filling: Sauté the mushrooms, serrano chili, onion, and bacon, seasoning to taste. Let cool.
  • Fill the steaks and wrap them; you can secure them with a toothpick.
  • Sear the rolls in a pan with a little olive oil.
  • Wrap each roll in a lettuce leaf and set aside.
  • Mix the vegetables in a bowl, dressing with olive oil, vinegar, salt, and pepper to accompany the rolls.
