600 grams rib eye, in steaks

100 grams Poblano chile
50 grams portobello mushroom
100 grams bacon, chopped
100 grams onion, sliced
25 grams serrano chile, sliced
400 grams fava beans, green
oregano
15 grams fresh cilantro
100 grams cherry tomato
200 grams goat cheese, (any fresh cheese)
25 milliliters balsamic vinegar
100 milliliters extra virgin olive oil
salt , and pepper
200 grams lettuce, (variety)
50 grams button mushrooms, sliced

Season the meat with salt and pepper and set aside.
For the filling: Sauté the mushrooms, serrano chili, onion, and bacon, seasoning to taste. Let cool.
Fill the steaks and wrap them; you can secure them with a toothpick.
Sear the rolls in a pan with a little olive oil.
Wrap each roll in a lettuce leaf and set aside.
Mix the vegetables in a bowl, dressing with olive oil, vinegar, salt, and pepper to accompany the rolls.
