4 leaves lettuce, large, washed and disinfected
8 slices turkey breast
1 zucchini, cut into strips
1 cup spinach, cut into strips
2 tomatoes, cut into strips and seeded
1 cucumber, cut into sticks, seeded
1 avocado, cut into thin slices
1/2 cups olive oil
1/4 cups apple cider vinegar
1/2 cups fresh cilantro, finely chopped
salt and pepper

Lay out the lettuce leaves and place the slices of turkey breast on them; fill them with spinach, zucchini, tomato, cucumber, and avocado.
Roll the lettuce as if making a burrito and cut in half diagonally.
For the cilantro vinaigrette, mix olive oil, apple cider vinegar, and cilantro. Season with salt and pepper to taste and serve with the lettuce wraps.
