  • 4 leaves lettuce, large, washed and disinfected
  • 8 slices turkey breast
  • 1 zucchini, cut into strips
  • 1 cup spinach, cut into strips
  • 2 tomatoes, cut into strips and seeded
  • 1 cucumber, cut into sticks, seeded
  • 1 avocado, cut into thin slices
  • 1/2 cups olive oil
  • 1/4 cups apple cider vinegar
  • 1/2 cups fresh cilantro, finely chopped
  • salt and pepper

  • Lay out the lettuce leaves and place the slices of turkey breast on them; fill them with spinach, zucchini, tomato, cucumber, and avocado.
  • Roll the lettuce as if making a burrito and cut in half diagonally.
